Cajun and Creole

Food from the South has long been iconic in America! Southerners have a knack for making food that is flavorful, spicy, and completely addicting. In this class, we are going to focus on a specific region of the south: Louisiana. The state has a large amount of French influence in their cuisine, from way back when the area was owned by France. Over time, the food has evolved into what we know today as either “Cajun” or “Creole.” In this class we will discover the differences between those two cousins, and make some delicious dishes as well. We’ll make dishes as such: Chicken and Andouille Gumbo, Shrimp and Grits, Alligator Po’Boy, Muffuletta, Crawfish Etouffe, and Beignets with Banana Rum Sauce and Pralines for dessert! This class is sure to be delicious and educational- win win!

COVID 19 UPDATE: At this time we are asking all students to wear a mask to class. We will be taking temperatures at the door, as well as providing hand sanitizer upon your arrival. If you have any symptoms, have been around someone with symptoms, or have traveled outside the country recently we are asking that you please stay home. You may call to cancel your ticket, and we will issue a credit to be used on a future class. Thank you for supporting us during this challenging time! We will do our best to make our classes as educational and fun as ever.  All food goes home in a box at this time so that masks need not be removed.  You will get a portion of each dish!

Please indicate the age of your child (children) in the comment sections so we can make sure that their recipes are age appropriate. Class ending times may vary. Please wear closed-toed shoes and wear your hair up off your shoulders.  Bring your favorite knife and a beverage to drink if you wish. We will provide knives if you do not have them.  We will also provide aprons. We will have filtered water to drink.

Our classes are popular and often sell out!  You must cancel your registration at least 7 days in advance to receive a full refund for this class.  There will be a processing fee to cancel your ticket per person no matter when you cancel. You can cancel by calling the school at 309-263-6020 or by emailing us your request to cancel at thecookeryinc@gmail.com.  Tickets canceled the day before or on the day of class will not receive a refund for any reason (even Covid related).  You may gift or sell your tickets to someone else if you are not able to come but we cannot forward them to another class.

If you have a cardboard gift card with a 3-digit number and want to redeem it for this class, you must call or email to reserve your class spot prior to the class selling out.  If you reserve your spot with a gift card and do not show, you will forfeit the amount owed for the class from your gift card. If your gift card has a 16-digit code, you can cash it in online when you purchase your ticket.
